Chicken Vegetable Quinoa Stirfry

Healthy food for ourselves and our families can be really good tasting, as evidenced by last night’s dinner. I had an idea in mind, then just started improvising and came up with this. Enjoy!

-2 organic chicken breasts cooked, chopped
-1 1/2 cups organic quinoa, cooked in broth as directed

Sauté the following together in skillet with olive or coconut oil:
-Big handful of organic baby carrots, chopped
-2 green onions, chopped
-1 organic red pepper, chopped
-1 onion, chopped
-Handful of organic kale, chopped
-Sea salt
-Pepper
-Drizzle of balsamic vinegar (while sautéing)

When everything is finished cooking, mix together and drizzle with desired amount of balsamic vinegar.
