Simple Little Cookie Recipe of the Day

Who doesn’t love chocolate chip cookies? Fresh, warm, gooey and right out of the oven? What if I told you that you can have those fresh, warm and gooey cookies right out of the oven – and that they are actually healthier than a traditional cookie – and only 5 ingredients?

Well, look no further. And before you turn up your nose after reading the first ingredient, open your mind and be willing to give these a shot. My kids loved them.

Grain-Free Almond Butter Chocolate Chip Cookies

  • 1 cup chickpeas (garbanzo beans), drained and rinsed
  • 1/2 cup natural almond butter (natural peanut butter or natural sun butter)
  • 1 teaspoon baking powder (aluminum-free, preferably)
  • 1/4 cup honey
  • 1/2 cup chocolate chips

Combine the first 4 ingredients into a food processor, until blended well.
Stir in chocolate chips.
Using a small scoop, place cookie dough onto a cookie sheet, flatten slightly and bake in a 350 degree oven for about 10 minutes.
