Simple Little Recipe of the Day – Avocado Egg Scramble

There is one food on this planet that I could not live without.

Did you know that the avocado is one of the healthiest foods on this earth? Here’s why. Avocados contain more than 25 essential nutrients, including vitamin A, B, C, E, & K, copper, iron, phosphorus, magnesium, and potassium. Avocados also contain fiber, protein, and several beneficial phytochemicals such as beta-sitosterol, glutathione and lutein.

All of these wonderful nutrients help fight off disease and keep you healthy.

Here is a quick and tasty recipe to try for breakfast tomorrow. It’s filled with what I call “God foods” which, to me, are foods that are eaten in their most natural state.

Avocado Egg Scramble

-Diced onion and green pepper and spinach, sauteed in a bit of olive oil.
-Farm-fresh, free-range eggs (We like the ones from chickens that eat bugs and other tiny critters.) Add into pan and scramble with sauteed vegetables.
-Top with fresh, sliced avocado and salsa.

If you love avocado, check out my wonderful Chocolate Banana Avocado Smoothie here. Enjoy it for breakfast – or for that matter- any time of the day. You won’t be disappointed!
